Today I invite you to try very tasty, fluffy and protein-rich protein muffins with cottage cheese. I baked my muffins with added blueberries and chopped strawberries. Thanks to this, I got delicious and moist muffins, which were excellent both for dessert and as a quick post-workout snack. Such high-protein cupcakes will be great not only for athletes and people practicing sports, but for everyone they will be a healthy and full of flavor dessert. You must try them!

- 200 g cottage cheese (I used high-protein)
- 150 g skyr (I used vanilla)
- 3 eggs (size L)
- 150 g all-purpose flour (1 cup)
- 200 g sugar (1 cup – but you can easily add less – e.g. 150 g)
- 1.5 teaspoons baking powder
- approx 30 g protein powder (optional)
- 50 ml oil
- approx 150 g fruit (I used blueberries and strawberries – optional)

How to make protein muffins with cottage cheese step by step
Step 1 – preparations
- Preheat the oven to 180℃ (top-bottom mode) or 170℃ (fan-assisted mode).
- Line a muffin tin with paper liners, or grease it with butter and dust with wheat flour.
Step 2 – preparing the wet ingredients
- Transfer the cottage cheese to a bowl.200 g cottage cheese
- Add skyr and eggs – blend together with a blender or food processor until smooth.150 g skyr, 3 eggs
Step 3 – preparing the protein muffin batter
- Pour wheat flour into a bowl, add baking powder and sugar – mix with a spoon.150 g all-purpose flour, 200 g sugar, 1.5 teaspoons baking powder
- If you have protein powder, add it to the bowl and mix.approx 30 g protein powder
- Pour in the blended skyr with eggs.
- Pour in the oil and mix.50 ml oil
Step 4 – filling the muffin liners
- Spoon the batter into the prepared muffin liners – I spooned about 3 tablespoons per muffin and got 11 pieces. If you have smaller liners, spoon about 2 tablespoons.
- Arrange some fruit on top of the muffins.approx 150 g fruit
Step 5 – baking muffins
- Place the muffin tin with muffins into a hot oven and bake for about 20-30 minutes – until a toothpick comes out clean.
- After baking, cool and sprinkle with a little powdered sugar.

High-Protein Muffins with Cottage Cheese – Notes
My today’s recipe for cottage cheese muffins will be especially useful for people who care about a high and adequate amount of protein in their daily diet. An adequate amount of protein is especially important for people who exercise, but not only. As a woman approaching fifty myself, I need a lot of protein in my diet. In my search for products and dishes that will allow me to get an adequate amount of it, I have been exploring all protein recipes for some time now. Until now, I ate cottage cheese straight from the cup, but such a variation in the form of muffins is an excellent idea. Especially if someone doesn’t like the consistency of cottage cheese :)
And from cottage cheese, I also highly recommend a recipe for cottage cheese pancakes – also with a huge amount of protein per serving :)

What ingredients are needed to bake protein muffins?
To achieve a high amount of protein in the muffins, I used products that are naturally rich in protein. Below are the products I used and possible substitutes.
- cottage cheese – I recently used my favorite protein cottage cheese from Lidl here – one cup contains 30g of protein!
- skyr – skyrs also have a lot of protein; I recommend vanilla skyr, as it will also add a nice flavor to the muffins, but natural skyr or, ultimately, thick natural yogurt can also be used.
- protein powder – it’s not essential for preparing the muffins, but it will also provide a good amount of protein – you can use any flavor of protein powder.
- oil – I used rapeseed oil, but any other mild-flavored oil can also be used; coconut oil would also work well.
- sugar – my muffins were baked as a post-workout snack, so sugar and flour added calories here, but if you want to get lower-calorie muffins, you can replace sugar with erythritol.
- flour – I made my muffins with regular wheat flour; I think it can easily be replaced with light spelt flour or oat flour. For heavier flours, if the batter turns out thick, you can add a little milk to loosen it.

How to vary the flavor of protein muffins?
I added some fresh fruit to my muffins – they sank to the bottom during baking, but that didn’t bother me at all. Instead of blueberries and strawberries, you can use other small fruits – and cut larger ones into smaller pieces. Instead of fruit, you can also add some grated or chopped chocolate to the batter.
You can change the flavor of the muffins with different extracts, flavored protein powder, or by adding grated lemon or orange zest. This way, you can bake different delicious protein muffins all the time :)

How to store protein muffins?
Protein muffins can safely stay at room temperature for several days. I transferred mine to an airtight container with a lid, which kept them soft and moist even after a few days. You can also freeze the muffins for about 3 months.
