- 2 packets vanilla pudding mix (aprox. 40 g each (powder))
- 2 teaspoon baking powder
- 3 eggs (large)
- 200 g sugar (1 cup)
- 250 g skyr
- approx 400-500 g plums

How to make pudding cake with plums step by step
Step 1 – Preparations
- Grease the baking pan with butter and sprinkle with breadcrumbs or flour (you can also line it with baking paper).
- Preheat the oven to 170℃ in convection mode or 180℃ in top/bottom heat mode.
- Sift together the flour, pudding mixes, and baking powder through a sieve.225 g all-purpose flour, 2 packets vanilla pudding mix, 2 teaspoon baking powder
- Wash the plums, cut them in half, and remove the pits.
Step 2 – Preparation of the Pudding Batter
- Place the eggs and sugar in a large bowl and mix on high speed with a mixer.3 eggs, 200 g sugar
- Mix until the mixture thickens, increases in volume, and becomes light in color.
- Then add about half of the sifted flour and mix briefly on low speed with a mixer.
- Add skyr and mix briefly – just until combined.250 g skyr
- Add the rest of the flour and mix briefly – just until combined.
- Transfer the batter to the prepared tin.
- Arrange the plums densely on the batter, skin-side down.approx 400-500 g plums
Step 3 – how to bake pudding cake with plums
- Place the cake pan in the preheated oven and bake for about 45 minutes – until a dry skewer comes out.
- After baking, cool the cake, remove it from the mold and sprinkle with powdered sugar.

Plum cake with skyr – notes
Using delicious and juicy Polish plums, I decided to bake a cake with them. But I wouldn’t be myself if I didn’t experiment with something along the way. And so, I baked this pudding plum and skyr cake. But where’s the pudding? Well, I added it to the cake itself, replacing part of the flour with pudding powder. Thanks to this, the plum cake gained an extraordinary aroma, and as it baked, a vanilla scent spread throughout the house. This is an interesting and tasty suggestion for an autumn and late summer cake. What ingredients are needed to make skyr plum cake?
To prepare this easy plum cake, you only need a few basic ingredients that you either already have or can easily buy in any store. Below is a condensed list of the products I used and possible substitutes.
- pudding – I recommend sugar-free vanilla pudding – you will need two packages of such pudding – each for half a liter of milk, you don’t cook the pudding here, you just add the pudding powder to the dough
- skyr – I most recommend vanilla skyr to further emphasize the vanilla flavor of the cake, but if you can’t find vanilla skyr anywhere, use natural skyr, or ultimately Greek yogurt
- all-purpose flour – any flour will be good
- plums – choose your favorite plums, mine weighed 400 g after pitting, just remember to arrange them skin-side down on the cake, so that the plum juice doesn’t additionally soak the cake

How many calories does pudding cake with plums and skyr have?
In the table below the recipe, I provided the calorie count for 100 g of cake; if you divide the cake into 12 roughly equal pieces, each will have approximately 208 kcal. Carbohydrates – 40 g, fats – 2 g, proteins – 6 g. I am providing the calorie count based on the products I used.

How to store plum and skyr cake?
It’s a good idea to transfer the baked and cooled skyr and plum cake to an airtight container with a lid, or cover it with a cake dome. This will protect the cake from drying out excessively. If it’s very hot, after 1-2 days you can put the cake in the refrigerator so that the juicy plums in the cake don’t start to spoil. You can also freeze plum cake for about 3 months.
