  • 200 g all-purpose flour (1⅓ cups)
  • 2 teaspoons baking powder

  • 80 g sugar (a little over ⅓ cup)
  • 100 g all-purpose flour (⅔ cup)
  • 1 teaspoon lemon zest

How to make rhubarb cake step by step

    Step 1 – preparations

    • Grease the baking pan with butter and dust with flour, or line with baking paper.

    • Wash the rhubarb, trim the ends, and cut it into pieces about 2-3 cm long.

    • Sift the flour and baking powder through a sieve.

    • Turn on the oven to 180℃ (top/bottom heat mode) or 170℃ (fan-assisted).

    Step 2 – preparing the creamed lemon cake

    • Place butter, sugar, lemon zest, and lemon juice in a mixing bowl.

    • Beat them together into a fluffy and light mass – I beat for several minutes on the mixer’s highest speed.

    • Add one egg and one tablespoon of sifted flour at a time to the beaten butter – mix briefly on low speed – just until combined.

    • Add the remaining flour in two portions and mix briefly on low speed.

    • Stop mixing when there are still remnants of flour visible – then gently stir the dough with a spoon.

    • Transfer the dough to the prepared tin.

    • Sprinkle rhubarb on top and gently press it into the dough.

    Step 3 – preparation of the crumble for the rhubarb cake

    • Briefly mix together or knead with your fingers the butter, sugar, flour, and lemon zest into a crumbly and slightly sticky mass.

    • Sprinkle the crumble over the top of the cake.

    Step 4 – baking the cake with rhubarb and crumble

    • Place the cake pan with the cake into the preheated oven.
    • Bake for about 50-55 minutes – until a toothpick comes out clean.
    • Cool the cake after baking.

    Rhubarb Cake with Streusel – Notes

    I love rhubarb, and as soon as it appears in early spring, I buy it and bake rhubarb cake and also make rhubarb lemonade, which my children adore. This time, I opted for a classic creamed Victoria sponge cake, which I prepared with added lemon to enhance the flavor. To this, I added plenty of fresh rhubarb and a delicious, buttery, slightly sweet, and slightly lemony streusel. This is how the perfect spring cake was created! Be sure to save this recipe, as it will come in handy more than once!

    What ingredients are needed to bake rhubarb cake with streusel?

    To prepare this cake, you essentially need 7 ingredients! You probably already have most, if not all, of them at home. Below is a condensed list of the products I used and possible substitutes.

    • rhubarb – I had 500 g of fresh rhubarb, and after trimming both ends, I was left with 450 g of rhubarb, which I cut into smaller pieces
    • butter – I used extra 82% butter; it must be soft and at room temperature, so take it out of the fridge earlier to warm up! If you don’t have extra butter, you can also use mixed butter or even vegetable butter.
    • all-purpose flour – any flour will be good
    • lemon – I added some grated lemon zest to the cake and the streusel, plus a little lemon juice to the cake itself. If you don’t have a lemon, or don’t like lemon cakes, you can omit it entirely. You can then add a touch of your favorite flavor to the cake, such as vanilla or almond, for taste.
    • sugar – for creaming the butter, I added a glass of fine baking sugar (I usually use powdered sugar, but I ran out). If you have powdered sugar, you can use it – it will be easier to cream the butter nicely. Use a glass of powdered sugar, which is 150 g.

    How many calories does rhubarb cake with streusel have?

    In the table below the recipe, I provided the calorie count for 100 g of cake with streusel and rhubarb (using the products I used). If you divide the cake into 12 roughly similar pieces, each will have approximately 368 kcal (carbohydrates – 39 g, protein – 6 g, fats – 21 g).

    How to store rhubarb streusel cake?

    After baking, cool the cake thoroughly, then cover it with a cake dome or store it in an airtight container with a lid. This will keep the cake fresh longer and prevent it from drying out. If it’s not too hot, the cake can stay at room temperature for about 3 days. If the cake needs to last longer, it’s worth storing it in the refrigerator. In that case, it’s best to take it out at least half an hour before serving so it can warm up and become soft (the cake has a lot of butter and will be slightly firm when chilled; warmed up, it will become soft and fluffy).

    Rhubarb cake can also be frozen for about 3 months.
