Why is it worth making this apple cake?
You absolutely must make this super simple and moist apple cake. Not only does it taste wonderful, it yields a large baking sheet, and what’s more, you don’t even need a mixer to prepare it! The cake itself is soft, fluffy, and moist. And that’s thanks to the large amount of grated apples added directly to the batter. Juicy, sweet apples give the cake this wonderful moistness and an incredible flavor at the same time! This is the perfect cake for a fall dessert or weekend gatherings with loved ones.
For this recipe, I was inspired by a cake from Julie Marie, but I am providing my own version of the recipe here.

Ingredients needed to bake an apple cake
To make this cake, you don’t need fancy or hard-to-find ingredients, because this is an apple cake just like grandma used to make. Made from simple and basic ingredients that you either mostly already have at home or can easily buy in any store – even a local neighborhood one. Below is a condensed list of the products I used and possible substitutes:
- apples – hard varieties that grate easily and don’t turn into mush will be best – e.g., Jonagold apples will work well. You can peel the apples or grate them with the skin on. If the apples are very juicy and release juice while grating, do not add it to the cake; lightly squeeze the apples instead.
- baking soda – due to the large amount of moist apples, in addition to baking powder, I added baking soda to the cake so that it would have the “strength to rise” and not become dense. However, if you don’t have baking soda, use a total of 3 slightly heaped teaspoons of baking powder.
- oil – I used rapeseed oil, but you can also use another oil with a delicate taste and smell, or even melted coconut oil.
- natural yogurt – I used thick Greek yogurt, but you can also use sour cream – 12% or 18%.
- cream cheese – I used regular inexpensive cream cheese, it could be President, or quark available f.e. at Lidl. You can also use cream cheese – the kind for sandwiches.
- caramel sauce – you can use store-bought, or make your own at home :)

How to make homemade caramel sauce?
Can’t find caramel sauce to buy, or fancy making it yourself? Great! Make the sauce using my recipe – I recommend one of two: the first caramel sauce prepared “the traditional way” by melting sugar in a saucepan – a bit longer and requires more attention, or the second method – for an express microwave caramel sauce – here you do everything in the microwave. This sauce sets and thickens faster, but it’s super simple to make. With both recipes, you’ll also find short preparation videos, so making them should be a breeze ;)

How to store moist apple cake?
After baking and cooling, it’s best to transfer the cake to an airtight container with a lid. If your home isn’t very hot, it can stay at room temperature for two days (in the container). If the cake is to be stored longer, or if it’s very warm, it’s best to keep it in the refrigerator – due to the cake’s moisture and the quark frosting. You can also freeze the cake for about 3 months.

How many calories does this simple grated apple cake have?
In the table below the recipe, I provided the calorie count and nutritional values for 100 g of apple, cream cheese, and caramel cake (using the products I used). If you cut the cake into approximately 24 equal pieces, each will have about 211 kcal (carbohydrates – 28 g, fats – 9 g, protein – 6 g). Such a low-calorie count is thanks to the high content of naturally sweet and low-calorie apples. So you can enjoy one or two slices with a warming autumn tea or coffee without guilt.

I already have a little feedback here – because I prepared this apple and curd cheese cake for my husband, who was cheering on ultramarathon runners at Kaliska 100 and offered the cake to runners and fans. Following requests for the recipe, I gathered myself and as soon as I had a moment, I wrote this post :) So, I wish you happy baking and bon appétit!
