Ingredients for Cinnamon Roll Muffins
- 2 eggs (size L)
- 120 ml oil
- 250 g natural yogurt (I used Greek)
- 300 g all-purpose flour (2 cups)
- 2 teaspoons baking powder
- 100 g sugar (½ cup)
- 0,5 teaspoon cinnamon
- ok 50 ml milk (optional – as needed for consistency)

- ok 30 g butter (melted)
- 50 g sugar (I used cane sugar)
- 1 teaspoon cinnamon

How to make cinnamon muffins without a mixer – step-by-step instructions
- Preheat the oven to 180℃ in top/bottom heat mode.
- In a large bowl, mix the dry muffin ingredients.300 g all-purpose flour, 2 teaspoons baking powder, 100 g sugar, 0,5 teaspoon cinnamon
- In a smaller bowl, whisk the eggs with a fork and pour them into the dry ingredients.2 eggs
- Add oil and yogurt.120 ml oil, 250 g natural yogurt
- Mix everything thoroughly.
- If the batter is too thick and doesn’t combine well, add a little milk and mix thoroughly.ok 50 ml milk
- Spoon 1 tablespoon of batter into the bottom of each prepared cupcake liner.
- Mix together the ingredients for the cinnamon mixture.ok 30 g butter, 50 g sugar, 1 teaspoon cinnamon
- Spoon a little of the cinnamon mixture onto the batter.
- Spoon in the rest of the batter.
- Finally, drizzle the remaining cinnamon mixture over the top of the muffins.
- Place the muffins in the hot oven and bake for about 30 minutes – or until a wooden skewer inserted comes out clean.
- After baking, let cool.

Today I invite you to a unique bake. Delicately sweet, wonderfully aromatic, and incredibly simple and quick to prepare muffins with cinnamon filling. You can prepare these muffins even without using a mixer! All you need is a spoon and two bowls. Thanks to the simple and precise steps described by me in the recipe, everyone, even those with little baking experience, will be able to prepare such autumn muffins in their own kitchen. Be sure to try this recipe and save it for later (you can save the recipe from my Instagram). Such quick muffins without a mixer are an excellent idea for a quick dessert with coffee or tea, and also when unexpected guests arrive :)

Ingredients needed to prepare cinnamon muffins
To bake these cinnamon roll muffins, you will need just a few basic ingredients that you likely already have at home or can easily find in any grocery store. Below is a shortlist of the products I used, along with some possible substitutes.
- oil -I used rapeseed oil, but you can use any other neutral-flavored oil. Melted coconut oil or melted butter will also work perfectly.
- yogurt – I used thick (full-fat) Greek yogurt here. If you are using plain natural yogurt—especially a thinner one—add the milk at the very end, as you might find it’s not needed. If you don’t have any yogurt, kefir is a great substitute.
- sugar – for the muffin batter itself, I used regular granulated sugar, but for the cinnamon swirl, I chose brown sugar for its better flavor. You can use only brown sugar, only white sugar, or even xylitol or erythritol.
- butter – I used high-fat butter (82%), but butter spreads or plant-based alternatives will also work.

Tips and tricks for perfect muffins
To ensure your cinnamon roll muffins turn out perfectly, remember not to overmix the ingredients. Mix them only until just combined. Be sure to add a little milk if the batter is too thick and cannot be easily stirred into a smooth consistency. Also, try not to overfill the muffin liners—it’s best if the batter (after adding the second layer) reaches at most 2/3 of the height. The muffins rise a lot while baking, and if there is too much batter, they might overflow.

Try not to spread the cinnamon filling too close to the edges of the liners, so it doesn’t stick to the paper and burn while baking. To give the muffins an even better flavor, you can add 1/4 to 1/2 teaspoon of salt to the batter – it really brings out the taste. A touch of vanilla would also be a great addition.

Tips for keeping your muffins fresh
To keep your muffins fresh for longer, store them in an airtight container with a lid. This prevents them from drying out and keeps them nice and soft. You can easily keep the muffins in such a container for about 5 days (though in my case, one muffin sat on the counter for even a week and was still delicious!). If you’re eating them after a few days, you can reheat a muffin in the microwave for about 30 seconds—it will become soft and wonderfully warm again.
You can also freeze these cinnamon roll muffins for up to 3 months.
