If you like sweet, fluffy yeast buns, you must try this recipe inspired by the famous Italian dessert.

- approx. 3.5 g instant yeast (half a packet)
- 125 ml milk
- 40 g butter
- 300 g all-purpose flour (2 cups)
- 50 g sugar (¼ cup)
- 1 egg (size L)

- 100 g sugar
- 1 tablespoon instant coffee

How to make tiramisu buns step by step
Step 1 – preparing the dough for the buns
- Heat the milk and butter together until lukewarm.125 ml milk, 40 g butter
- Place the dough ingredients in a large bowl.approx. 3.5 g instant yeast, 300 g all-purpose flour, 50 g sugar, 1 egg
- Add the heated milk and knead together to form a smooth dough.
- Cover the bowl with the dough and set aside in a warm place for about an hour, allowing the dough to rise.
Step 2 – preparing the filling for the buns
- Transfer the mascarpone to a bowl, add sugar and coffee.50-75 g mascarpone cheese, 100 g sugar, 1 tablespoon instant coffee
- Mix thoroughly together.
Step 3 – preparing tiramisu buns
- Remove the risen dough onto a lightly floured surface and briefly knead the dough.
- Roll out into a fairly thin sheet.
- Spread the entire surface of the dough with the coffee mixture.
- Roll the dough into a log.
- Using a knife, mark 8 portions on the log – I first mark the center, then the centers of each half, and finally the centers of each piece.
- Cut the dough into slices with a thread at the marked places.
- Arrange the buns in a baking dish, leaving small gaps.
- Cover the buns with plastic wrap or a towel and leave for about 30 minutes.
Step 4 – baking tiramisu buns
- While the buns are rising, preheat the oven to 180 degrees Celsius (top/bottom heat mode).
- Place the risen buns in the oven and bake for about 25 minutes – until nicely browned.
- After baking, let the buns cool slightly.
Step 5 – preparing the mascarpone frosting
- Transfer the mascarpone cheese to a bowl, add the heavy cream and powdered sugar – mix thoroughly.100 g mascarpone cheese, approx 75 ml heavy cream, 50 g powdered sugar
- Frost the buns with the frosting.

Why make tiramisu buns?
My buns today are a true delight for the palate. Still slightly warm, fluffy, and drizzled with mascarpone glaze, they are a perfect accompaniment to afternoon coffee or tea. Such a yeast roll will surely appeal to every fan of cinnamon rolls – and I dare say that these tiramisu swirl buns are a highly “souped-up” version of cinnamon rolls. Even more aromatic and addictively delicious! So if you can’t imagine a better dessert than a cinnamon roll in autumn, then you absolutely must make these tiramisu rolls. You will surely love them!

What ingredients are needed for tiramisu rolls?
To make these yeast tiramisu rolls, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- yeast – this time I used instant yeast, but you can, of course, use regular fresh yeast – use about 15g of it, mix it with a teaspoon of sugar and lukewarm milk, cover and set aside in a warm place for about 20 minutes to activate, only then add it to the remaining dough ingredients; in this case, do not melt the butter with milk, but add it softened to the flour
- mascarpone – this is a creamy Italian cheese that you can easily find in any Lidl, Biedronka, or other larger stores; it’s best to use it for the rolls, but if you absolutely can’t get it, you can use ground cheese for cheesecakes, or for example, a cream cheese like Almette
- whipping cream – I used liquid cream from a carton with 30% fat content; you can also use 36%, but then the calorie content of the rolls will slightly increase
- coffee – powdered instant coffee will be best; if you have granulated coffee, it might be harder to mix with the cream, but it will also work

How to get perfectly fluffy snail rolls?
For the dough for the rolls and then the rolls themselves to be light and fluffy, it is important that the dough rises well. If the dough doesn’t rise well after preparation, you can place the bowl with the dough in the oven and turn on the heating to 30 degrees Celsius. The warmth and enclosed space will help the dough rise better. If, despite this, the dough doesn’t rise, it means that the yeast is “not working”. You can prepare a new batch of yeast (in a small amount of milk), or add instant yeast and knead the dough again. Yeast may not work if it is overheated or too old.

It is also important not to add too much flour beyond what is specified in the recipe. Therefore, use only a minimal amount of flour for rolling, so that it does not combine with the dough.
Allowing the sliced rolls to puff up (rise) also makes the finished rolls softer and lighter. Therefore, do not skip this step in preparing your rolls.

How to serve tiramisu snail rolls?
You can serve tiramisu rolls after they have cooled slightly and are spread with mascarpone glaze – if you spread the glaze on still warm rolls, it will melt more, which will additionally coat the rolls on all sides. If you spread it on cooled rolls, the glaze will not melt, but will form a thicker layer on top of the snail rolls. So, choose which version you prefer :)
Additionally, before serving, you can sprinkle the rolls with various toppings – for example, bitter cocoa, powdered instant coffee, drinking chocolate (powdered), or finely grated regular chocolate. This will add flavor and character to the rolls.

How to store tiramisu buns?
After baking and cooling, it’s worth transferring the tiramisu buns to an airtight container with a lid to keep them fresh and fluffy for as long as possible. You don’t need to put them in the fridge. They can easily last several days at room temperature.
You can briefly reheat such two- or several-day-old buns in the microwave (I heat them for about 30 seconds). This will make the dough super fluffy again, and the buns will be wonderfully warm and aromatic.
