- 2 teaspoons baking powder
- 50 g sugar (¼ cup)
- 1 teaspoon cinnamon
- 60 g butter (soft)
- 1 egg (large)

- ok 80 g carrots ( 1 medium)

- approx 20 g butter (melted)
- 100 g sugar (I used cane sugar – you can use a little less)
- 1 teaspoon cinnamon
- approx 50 g nuts (I used pecans – chopped)
ingredients for the icing for carrot buns
- 100 g powdered sugar (⅔ cup)
- 2-3 tablespoons milk (to consistency)
- handful nuts (chopped)

How to make carrot rolls step by step
Step 1 – preparations
- Grease the baking pan with butter and dust with flour.
- Preheat the oven to 170℃ (convection) or 180℃ (top/bottom heat mode).
Step 2 – preparing the carrot dough for the rolls
- Peel the carrot and grate it on a fine grater.ok 80 g carrots
- Transfer the dry ingredients for the dough into a large bowl, add butter in pieces and an egg – mix together.300 g all-purpose flour, 2 teaspoons baking powder, 50 g sugar, 1 teaspoon cinnamon, 60 g butter, 1 egg
- Add the carrot to the bowl with the dough and knead together.
- If the dough doesn’t come together into a uniform mass, add milk in portions while continuously kneading the dough.ok 50 ml milk
- Turn out the dough onto a lightly floured countertop and knead briefly.
- Roll out the dough into a thin sheet – with a maximum thickness of 0.5 cm.
- Brush the top of the dough with melted butter.approx 20 g butter
- Mix sugar and cinnamon together.100 g sugar, 1 teaspoon cinnamon
- Sprinkle the mixture over the top of the dough.
- Sprinkle the dough with chopped nuts.approx 50 g nuts
Step 3 – preparing the rolls
- Roll the dough into a fairly tight log.
- Cut the dough into 8 slices with a sharp knife.
- Arrange the rolls in the prepared baking dish.
- Place the dish in the oven and bake the rolls for about 20-25 minutes – until nicely browned.
- After baking, cool the rolls.
Step 4 – how to make icing for carrot rolls
- Sift the powdered sugar into a bowl and add milk in portions – stir continuously until all the sugar dissolves and you get a slightly runny glaze.100 g powdered sugar, 2-3 tablespoons milk
- If you wish, you can also add a little cinnamon to it.
- Glaze the buns with the icing.
- Finally, sprinkle the buns with chopped nuts.handful nuts

Why is it worth baking carrot swirls?
Today I have a very autumnal suggestion for you – super quick and simple carrot rolls swirls. These buns are prepared without yeast, so the dough doesn’t need to rise for a long time. And making it will take at most 10 minutes. If you haven’t baked swirl-type buns before because you don’t know how to handle yeast, then these carrot baking powder buns are just for you! You absolutely must try this recipe, especially since such carrot buns are not only an ideal dessert to go with a cup of hot tea, but also a wonderful snack during the day, and even a sweet breakfast that will provide plenty of energy for a good start to the day!

Ingredients needed for carrot rolls with nuts
To make these simple sweet carrot buns you won’t need any fancy ingredients! Everything is very basic, and you either already have them or can easily get them at any store. Below is a condensed list of the products I used and possible substitutes.
- carrot – one medium carrot is enough here – mine weighed 80g after peeling, it can be a little more or less. Thanks to the carrot, the buns are moister and have a nicer color, and you also sneak some vegetables into your daily diet :)
- nuts – nuts added to the filling make the carrot rolls wonderfully crunchy, and at the same time add healthy, natural fats. I used coarsely chopped pecans here, but you can use other nuts – e.g., walnuts or hazelnuts, or even more exotic nuts – such as cashews or Brazil nuts.
- butter – I used extra butter with 82% fat content, you can also use mixed butter, or even vegetable butter
- milk – I used 1.5% UHT milk, but any milk will be fine – including plant-based milk

Can you make vegan carrot rolls?
Yes, this recipe is easy to convert to a vegan version. As I wrote above – replace the butter for the dough and filling with vegetable margarine, and milk with a plant-based drink. You can substitute the egg added to the dough with half of a well-mashed banana :) You can bake them in the morning and then you’ll get amazing vegan carrot rolls for breakfast, or for a second breakfast at work or for children at school.

How to store homemade carrot buns?
After baking, let the buns cool and then spread them with icing. The icing not only adds sweetness to the buns but also protects their surface and prevents the bun dough from drying out as much. I also recommend transferring any uneaten buns immediately to an airtight container with a lid. This way, the carrot buns with nuts will retain their freshness even longer and will be perfect for eating.
You can also freeze carrot rolls for about 3 months and then reheat them whenever you crave something delicious and aromatic.
