- 70 g wheat flour – all-purpose (half a cup)

- approx 200 ml hot water
- approx 30 ml amaretto (optional)

- 100 g milk chocolate

How to make chocolate sponge cake for the cake
- Lightly mix the egg whites and add sugar to them – mix on high speed until the egg whites are very fluffy, white and thick.4 egg whites, 200 g sugar
- Meanwhile, sift both flours and cocoa together through a sieve.70 g wheat flour – all-purpose, 70 g potato starch, 20 g dark cocoa
- Add the egg yolks to the egg whites and gently mix or blend on low speed.4 egg yolks
- Add the flour and gently mix.
- Pour the batter into the springform pan (baking paper on the bottom, and clean, dry sides).
- Bake the chocolate sponge cake in an oven preheated to 170 degrees (convection) for about 40 minutes – until a dry skewer comes out clean.
- Cool the sponge cake well and cut it into two layers.
How to make chocolate mousses for the cake.
- Chop the chocolates and transfer them to separate bowls.200 g white chocolate, 100 g dark chocolate
- Mix the egg yolks with a mixer on high speed.4 egg yolks
- Heat the heavy cream and when hot, slowly pour into the egg yolks, continuously mixing on low speed.250 ml heavy cream
- Pour the mixture back into the saucepan and heat over low heat until the cream slightly thickens.
- Pour roughly half of the cream into each of the chocolates, wait 1-2 minutes, and mix thoroughly until the chocolates are well dissolved. Leave to cool slightly.
- Whip the cold heavy cream with a mixer on high speed until thick.250 ml heavy cream
- Add half to each of the melted chocolates and gently mix.
Chocolate Tuxedo cake assembly
- Place the bottom sponge cake layer back in the springform pan and soak it – you can use coffee like me, or sweetened tea or lightly sweetened water.2 teaspoons instant coffee, 1 teaspoon sugar, approx 200 ml hot water, approx 30 ml amaretto
- Spread the dark chocolate mousse over the sponge cake.
- Carefully spread the white chocolate mousse and gently distribute it.
- Cover the mousse with the second sponge cake layer and soak it.
- Chill the cake in the refrigerator for at least 4 hours – so that the mousses set.
- Before serving, pour chocolate glaze over the cake – heat the heavy cream in a saucepan, when hot add the chopped chocolate and mix thoroughly. Let the glaze cool slightly and pour it over the top of the cake.50 ml heavy cream, 100 g milk chocolate
- Decorate the cake as desired.

What is Tuxedo Cake?
I came across Tuxedo Cake on pinterest and was very captivated by its colors and flavors. In Polish, this cake would be called a ‘smokingowy tort’ (tuxedo cake), but somehow that name doesn’t appeal to me. That’s why I kept the English name in the recipe. And where did such a name for the cake come from anyway? The dark cake combined with dark chocolate mousse and white chocolate mousse, with their contrasting colors, resemble the colors of a tuxedo. Where the dark tuxedo contrasts with a white shirt. This comparison led to the creation of Tuxedo cakes and tortes. Here, I prepared a dark chocolate sponge cake, which I layered with chocolate mousses and covered with chocolate glaze. The cake turned out delicious and light. You must try it!

Ingredients needed to prepare chocolate mousse cake
To prepare the cake, you will need a few basic ingredients that are generally available in every store. Below is a shortened list of products I used and possible substitutes.
- chocolate – for the cake, I used a total of 400 g of chocolate – including 200 g of white chocolate, 100 g of dark chocolate, and 100 g of milk chocolate. When shopping, pay attention to the weight of the chocolate you buy, because white chocolate is very often sold in 80-90 g packages, and the same applies to dark chocolate. I usually buy mine at Lidl from their brand – they always have one hundred gram packages.
- heavy cream – for preparing the chocolate mousses, I used a total of 550 ml of heavy cream. Here I used liquid cream in a carton with 30% fat content.
- cocoa – for the sponge cake, I used bitter cocoa. If you want the sponge cake to have a darker and more black color, you can use black cocoa here, or add a little black food coloring. This is not necessary, of course; regular bitter cocoa is perfectly sufficient.
- egg yolks – for preparing the mousse, I used four egg yolks from size L eggs.

How to make chocolate mousse cake – tips
The main role in this cake is, of course, played by two chocolate mousses – one made with dark chocolate, and the other with white chocolate. Preparing these mousses itself is not difficult, but it requires a little attention. White chocolate, after melting, is thinner than dark chocolate and therefore less stable, which is why I used twice as much of it here as dark chocolate. It is also much sweeter, so the dark chocolate mousse nicely balances it out and ensures the cake isn’t too sweet.
To prepare the mousse, you will need egg yolks and heavy cream. Whisk the egg yolks with a mixer – although you can also mix them with a kitchen whisk – and slowly pour in the hot cream. This will sterilize the egg yolks and make the mousse safe to eat. Place this mixture of cream and egg yolks back on the stove and heat, stirring. Do this over low heat and be careful not to make “scrambled eggs.” In that case, you will need to prepare a new batch of cream. Pour the hot cream, roughly half into each, over the chopped chocolates placed in separate bowls and mix until the chocolate dissolves. If all the chocolate doesn’t dissolve, you can briefly heat it in the microwave or in a water bath.

Can chocolate mousse be made without egg yolks?
If you don’t want to add egg yolks to the mousse, or you’re afraid that the mousse won’t turn out well with them, you can omit them. In that case, simply heat the heavy cream and pour it over the chopped chocolate. To ensure the mousse sets well, you can add a slightly heaped teaspoon of gelatin dissolved in a small amount of water to each of them.

What to do with egg whites left over from making mousses?
Did you prepare mousse with egg yolks and have egg whites left over? If you don’t know how to use them and don’t really want to make meringue or mini meringues, you can bake a very nice chocolate cake with egg whites. Instead of cake, I also recommend delicious, light, and wonderfully fluffy angel food cupcakes. Serve them with cream and fresh fruit.

How to make chocolate sponge cake for a cake – video
In the video for the Tuxedo cake, I didn’t show how I prepare the chocolate sponge cake, because I already have a separate video for it. You can bake the sponge cake itself in advance – I like to bake them at least a day beforehand and store them wrapped in cling film. Such “rested” sponge cakes cut into layers much better and are easier to work with.
How to store Tuxedo cake?
Due to the light chocolate mousses, the cake should be stored in the refrigerator. Besides, it tastes best served cold. You can additionally place it in a container so it doesn’t absorb odors from the refrigerator. It can stay in the refrigerator for about 5 days and will still taste fantastic.

How to cut chocolate mousse cake?
Due to the chocolate mousses and chocolate glaze on top, the cake is best cut with a sharp, smooth, and heated knife. I immerse my knife in hot water for a few minutes, wipe it, and cut a slice of cake. After each cut, I rinse the knife in hot water so that the blade is clean and not covered in chocolate. This way, each slice of cake is neatly cut, and its layers are beautifully visible.

How many calories does chocolate mousse cake have?
It’s no secret that with such an amount of chocolate and heavy cream, this cake is not low-calorie. Although 100 g of cake is about 350 kcal, when you divide it into 12 portions, each will already have about 470 kcal (48 g carbohydrates, 28 g fat, and 9 g protein). But I think that on special occasions, you can allow yourself such indulgence. Especially since the cake tastes so exquisite that it’s hard to resist.
