Today I have a suggestion for a no-bake cake for you – no-bake buttermilk cake. It’s a very simple and low-calorie no-bake cake with a buttermilk mass, fruits, and jelly on top. This fit cake with jelly is an ideal dessert on hot days. You must try it.

  • approx. 100 g ladyfingers (- I used elongated ones)
  • 1 liter natural buttermilk
  • 100 g erythritol (or other sweetener – e.g. sugar)
  • 5 teaspoons gelatin (+ a little water)
  • 1 package clear jelly (+ 300 ml hot water)
  • approx. 150 g fruit (mixed for me)
  • 1 package fruit jelly (+ 400 ml hot water)

How to make no-bake buttermilk cake

  • Prepare the mold – line it with cling film or aluminum foil.
  • Arrange the ladyfingers tightly on the bottom.
    approx. 100 g ladyfingers
  • Prepare the clear jelly – dissolve it in 300 ml of hot water and mix thoroughly.
    1 package clear jelly
  • Pour the buttermilk into a larger bowl.
    1 liter natural buttermilk
  • Add erythritol or sugar and mix briefly.
    100 g erythritol
  • Add the clear jelly and mix.
  • Cover the gelatin with cold water – use just enough to cover the gelatin. Let it sit for 5 minutes, and when it swells, heat it (I heat it for about 10 seconds in the microwave, you can also place it in a pot with hot water and stir until it becomes liquid).
    5 teaspoons gelatin
  • Add a few tablespoons of buttermilk to the gelatin and mix thoroughly.
  • Pour the gelatin into the rest of the buttermilk mixture and quickly mix.
  • Carefully pour the mixture over the ladyfingers.
  • Refrigerate the mold until set.
  • In the meantime, prepare the fruit jelly and set it aside to cool and slightly thicken.
    1 package fruit jelly
  • Wash the fruit and, if using large fruits, cut them into smaller pieces.

  • Arrange the fruit on the set buttermilk and pour the thickening jelly over them.
  • Refrigerate the mold again for the jelly to set.

I provide the calorie count using erythritol, which has no calories. If you use regular sugar, the calorie count will increase.

No-bake buttermilk cake – notes

Buttermilk cake is a bit like a no-bake cheesecake, but without cottage cheese. Because it’s made with buttermilk.

In consistency, this dessert is more like jelly, and it has few calories :)

To reduce its calorie content and make a fit dessert, I used erythritol instead of sugar to sweeten it. Erythritol is a natural sweetener that has no calories. It is only slightly less sweet than white sugar, so we use it in the same amount. If you don’t have erythritol, you can use xylitol or regular sugar (but then the calorie content of the dessert will be slightly higher).

I made my buttermilk dessert with natural buttermilk, to which I added crystalline jelly for flavor, in addition to erythritol.

You can make other flavor versions of this no-bake cake here.

If you choose a fruit buttermilk instead of natural buttermilk – e.g., strawberry buttermilk and strawberry jelly with it, you will get a no-bake strawberry buttermilk cake :)

Fruit buttermilk is usually already slightly sweetened, so before adding sugar to it, check if that sweetness is enough for you, or if you need to sweeten the mixture a bit.

How to make no-bake buttermilk cake – tips

The preparation of this no-bake dessert itself is not difficult, but it requires some cooling time.

First, we cool the buttermilk mixture. Only when it has firmly set, arrange the fruit on top and pour over the setting fruit jelly.

The jelly for the top must already be thickening, otherwise it might run down the cake!

You can arrange any available fruits on the no-bake buttermilk cake. Cut larger ones into smaller pieces beforehand. Choose a jelly flavor that matches the fruits. Although it’s not essential :)

Put the cake with jelly and fruit back into the fridge so that the jelly on top sets firmly.

Before serving, remove the buttermilk cake from the fridge and carefully separate the cake from the edges (if you lined the mold with foil beforehand, you can unclip the springform ring immediately).

Such a no-bake jelly cake is a great idea for a dessert on a hot summer day – not only is it wonderfully refreshing and tastes great, but it also has few calories :)
