  • 0.5 teaspoon baking powder
  • 150 g butter (preferably cold)
  • 4 egg yolks (from L-size eggs – the egg whites will be needed for the meringue!)
  • 2 tablespoons powdered sugar

  • approx. 1 kg strawberries
  • 100 g sugar (½ cup – you can add less if the fruits are sweet)
  • 65 g potato starch (5 tablespoons)

  • 4 egg whites (from L eggs)
  • 150 g sugar (¾ cup)
  • 1 teaspoon potato starch
  • 1 teaspoon lemon juice

How to make apple pie with strawberries step by step

    Step 1 – Preparations

    • Line the cake tin with baking paper (to make the paper stick well, I grease the tin in a few places – on the bottom and on each side – with a little butter, to which the paper adheres).

    • Wash the strawberries, remove the stems, and cut them into smaller pieces – halves or quarters – depending on the size of the fruit.

    Step 2 – Preparing the pie crust

    • Transfer the flour, baking powder, butter cut into smaller pieces, and sugar to a bowl.

    • Carefully crack the eggs, separate the yolks from the whites – add the yolks to the shortcrust pastry ingredients, and transfer the whites to another bowl.

    • Knead the dough – it may still be slightly crumbly.

    • Pour the dough into the form and carefully line the entire bottom with it.

    • Place the form with the dough in the refrigerator and preheat the oven to 180℃ (top/bottom heating mode).
    • Once the oven is preheated, place the form with the chilled dough inside and pre-bake it for 20 minutes.

    Step 3 – preparing the strawberries

    • While the dough is baking, prepare the strawberry filling.
    • Add sugar and potato starch to the cut fruit – mix thoroughly.

    Step 4 – preparing the meringue for the apple pie

    • Start lightly mixing the reserved egg whites.

    • Start slowly adding sugar in portions and mix together at high speed with a mixer.

    • Once you’ve added all the sugar and the egg whites are very thick and white, check if the meringue is well-made – take a small amount of meringue on your finger and rub it between your fingers – if you don’t feel sugar crystals, then the meringue is well-mixed.

    • Add potato flour and lemon juice to the egg whites and mix briefly.

    Step 5 – preparing the dough

    • Remove the form with the pre-baked crust from the oven and lower its temperature to 140 ℃.
    • Spread the strawberries on the base – if they have released juice, do not add it!

    • Spread the meringue over the strawberries and smooth it out.

    • Place the form in the oven and bake the cake for about 40 minutes.
    • After baking, cool the cake thoroughly and serve when it is cold.

    Strawberry meringue pie – notes

    My daughter and I love traditional apple pie with crumble, but this time, using the first Polish strawberries, I decided to prepare a strawberry version, and I must say it was a hit! The pie turned out absolutely delicious! Melting in your mouth, light, and very fruity. The strawberries added exceptional moisture and delicious flavor to the pie. The sweet meringue on top made the pie nicely sweet, and the whole thing looked very pretty. You must try this recipe and save it for later!

    What ingredients are essential for preparing strawberry pie?

    To make this strawberry cake, you essentially need about 7 basic ingredients that you either already have at home or can easily buy in any store. Below is a condensed list of the products I used and possible substitutes.

    • butter – I used extra 82% butter, you can optionally substitute it with a butter blend or vegetable butter.
    • all-purpose flour – any flour will be good.
    • potato flour – this can be potato flour or potato starch – strawberries are very juicy and release a lot of juice during baking, potato flour is meant to thicken this juice and prevent the shortcrust pastry from becoming excessively soggy.
    • lemon juice – if you don’t have fresh lemon juice for the meringue, you can use “bottled lemon juice” or add a teaspoon of vinegar.

    Can you make charlotte with frozen strawberries?

    Fresh strawberries will be better here because they are tastier. But outside of strawberry season, you can use frozen fruit. In that case, thaw them – preferably by placing them in a sieve so that the juice drains immediately. Add sugar and potato flour to the thawed and drained fruit and mix thoroughly.

    How to make strawberry charlotte with crumble topping?

    Do you fancy shortcrust pastry with strawberries and crumble topping? No problem! Prepare the following ingredients:

    • 100 g butter
    • 150 g all-purpose flour (1 cup)
    • 60 g sugar (a little over 1/3 cup)

    Knead them together into a loose crumble and sprinkle it over the meringue – before baking.
