Recipe for an autumn cake with halva and rapeseed oil
In autumn, it’s worth reaching for delicious Polish seasonal fruits – apples, plums, and pears and adding them to your baked goods. Today I have for you a recipe for a sensational, very simple and quick cake with fruit and halva, for which you don’t even need a mixer! I prepared the cake with rapeseed oil, which works perfectly as a butter substitute in sweet baked goods. I recommend it!

- 125 ml rapeseed oil (- half a cup)
- 2 eggs (- size L for me)
- 60 ml milk (- 1/4 cup)
- 300 g wheat flour – all-purpoos (- 2 cups)
- 2 teaspoons baking powder
- 150 g sugar (- 3/4 cup – but you can add less)
- 100 g halva (- vanilla for me)
- approx 350 g fruit (- apples, pears, plums)

How to make a cake with halva and fruit
- In a large bowl, mix together rapeseed oil, milk, and eggs.125 ml rapeseed oil, 2 eggs, 60 ml milk
- Mix the flour with baking powder and pour into the wet ingredients.300 g wheat flour – all-purpoos, 2 teaspoons baking powder
- Add sugar and mix everything with a spatula.150 g sugar
- Cut the fruit into larger cubes – if using apples or pears, peel them and remove the core.approx 350 g fruit
- Add the fruit to the dough.
- Crumble the halva and add it to the dough.100 g halva
- Mix the dough with a spoon – it will be thick.
- Transfer the dough to the prepared pan.
- Bake at 160 degrees (fan-assisted) for about 70 minutes – until a dry stick.
- After baking, cool the cake.

Halva and fruit cake – notes
My fruit and halva cake today I prepared with rapeseed oil instead of butter.
I don’t know if you know, but in confectionery, oils work great as a butter substitute. You can prepare practically any baked good with oil – whether sweet or savory. I especially recommend rapeseed oil here, which has many additional health benefits!
Butter, like other animal fats, is a rich source of saturated fatty acids and also has a fairly high cholesterol content. Rapeseed oil, like most vegetable oils and other plant-based fats, is primarily a source of unsaturated fatty acids and does not contain cholesterol.
Rapeseed oil is a source of alpha-linolenic acid, or ALA for short. ALA is an essential omega-3 fatty acid necessary in the human diet because our body cannot produce it. In addition to omega-3 and omega-6 acids, rapeseed oil contains vitamins E and K. Just two tablespoons of rapeseed oil a day will help you maintain healthy cholesterol levels. Therefore, it is worth reaching for this oil in your kitchen and replacing butter with oil as often as possible.

Advantages of replacing butter with rapeseed oil in baking
- rapeseed oil has a neutral taste and smell, so it does not affect the taste of the baked good
- oils are easily accessible, and what’s more – especially recently – they are cheaper than butter, which is constantly getting more expensive
- by replacing butter with oil in baked goods, you can get a vegan cake (remember then also to replace eggs with a vegan alternative – e.g., one egg can be replaced with half a medium banana)
- by introducing oil, you provide your body with healthy omega-3 and omega-6 acids, which help maintain proper cholesterol levels
- the processing of animal products is more harmful to the environment, so by choosing oil, we contribute to reducing CO2 production and care for our shared environment :)

How to make a cake with rapeseed oil?
My fruit and halva cake is a type of cake that you can prepare without a mixer. One large bowl and a spoon will be perfectly sufficient here.
First, mix the oil with eggs and milk, then add the dry ingredients to the bowl.
Just mix everything with a spatula – the batter will be thick, but that’s how it should be!
Peel the fruit, remove the core, and cut into larger cubes.
Because the batter is thick, it’s best to use firm fruits here. If you have very soft pears, they might turn into a “mush” during mixing.
If you are using plums, cut them in half, remove the pit, and cut into larger pieces.
Mix the cake with pears, or with apples or plums, only briefly with a spoon. Also add crumbled halva – it adds a nice flavor to the cake and it’s worth not skipping this ingredient :)
Transfer the batter to a mold and bake until a toothpick comes out clean.

I love the beginning of autumn precisely for these delicious, juicy fruits. Recently, on September 8th, we celebrated Plum Day, and on September 28th, it will be Apple Day, so it’s worth celebrating this day with such a delicious apple cake :)
