Recipe for fluffy and simple Italian focaccia
Today I have for you a recipe for a delicious and simple Italian snack. Italians are masters of simple cuisine, where recipes use basic ingredients and seasonal vegetables and fruits. Italian focaccia is a very popular savory yeast flatbread in this country. It can serve as a snack or even as bread. In the morning, you can buy it in any Italian bakery – warm and fragrant. Just tear off pieces of the dough and eat. You can also dip pieces of the torn dough in a little olive oil – it will be even more delicious.

Prepare this delicious, fluffy, and nicely crispy yeast focaccia today and enjoy it as a snack, or an accompaniment to breakfast or dinner.

- 300 g wheat flour – all-purpose (I used type 650, 2 cups)
- 150 ml water (lukewarm)
- 10 g yeast (fresh)
- 0.5 teaspoon sugar
- 50 ml milk (lukewarm)
- 2 tablespoons olive oil
- 0.5 teaspoon salt

How to make focaccia step by step
- Crumble the yeast, add half a teaspoon of sugar and mix until the yeast crumbles.10 g yeast, 0.5 teaspoon sugar
- Add lukewarm (!) milk to the yeast and mix – set aside to rise.50 ml milk
- Place the flour in a large mixer bowl.300 g wheat flour – all-purpose
- Add salt and the yeast starter to it – start kneading the dough. Gradually add water.0.5 teaspoon salt, 150 ml water
- Add 2 tablespoons of olive oil during the process.2 tablespoons olive oil
- Cover the finished dough with a cloth or cling film and set aside for about an hour to rise.
- After this time, briefly knead the dough with your hands.
- Grease the baking pan with olive oil.olive oil
- Place the dough and stretch it to the size of the pan.
- Cover the pan with cling film and set aside for about half an hour for the dough to puff up.
- Remove the film from the pan and make indentations in the dough with your fingers.
- Sprinkle the top of the dough with a little salt and dried herbs – basil, oregano, and rosemary.salt, basil, oregano, rosemary
- Bake at 190 degrees (preferably in pizza mode – bottom heat and fan on – if you don’t have such a mode, then in convection oven) for about 20 minutes – until golden brown.
- After baking, let it cool.

Italian focaccia – notes
Italian focaccia is a true feast for the palate! This soft, fluffy savory yeast flatbread will surely satisfy your hungry taste buds. Italian chefs have been perfecting this delicious snack for generations, and today you can enjoy its unique taste wherever you are, and you can even make it in your own kitchen! Perfect for a quick lunch or as an accompaniment to an evening wine with friends.
Focaccia is, right next to pizza, our favorite Italian baked good.
It is, by the way, very “related” to pizza. It is also prepared from yeast dough. Only it is baked without sauce and toppings on top.
Its dough is also thicker and more elastic, with large “eyes” (holes).
You can treat focaccia as a tasty snack, or serve it for dinner.
My children like to take it to school – because it’s tasty and doesn’t fall apart during transport :)
Here I provide a recipe for one medium focaccia – enough for approximately 8 servings.

Focaccia Recipe
Italian Focaccia is made from a dough that closely resembles pizza dough. The main difference is that focaccia dough is wetter and less dense, and it requires a long rising time before going into the oven. Additionally, focaccia typically does not include tomato sauce or cheese.
Once the dough has risen, it is usually kneaded briefly again and transferred to an oiled baking pan. The dough is then left to rise a second time until it is beautifully puffy. At this point, we drizzle the focaccia dough with olive oil and press our fingers into it to create deep dimples, allowing the oil to pool inside them. The top is then sprinkled with seasonings—primarily salt, basil, and oregano—and baked.

You can add different spices to the top, such as chili flakes, or add thinly sliced vegetables like olives, onions, or tomatoes. In fact, many people create beautiful "focaccia art" using vegetables, which looks absolutely stunning. I have also made a herb focaccia with grated potato, and let me tell you, it tasted exquisite! When traveling in Italy, we also very often ate it with a sprinkle of sharp, grated cheese.
Therefore, focaccia can have many wonderful and tasty variations—you can bake a different one every single time!
Tip: If you love yeast-based snacks, you can easily double the dough recipe. That way, you can take some to work for lunch or pack it for your kids for school. It will give them plenty of energy for the rest of the day during their school breaks. This works exceptionally well if your kids are not big fans of traditional sandwiches (just like my own). I know that focaccia is always a hit with them, and their lunchboxes always come home empty!
